The exercise, dubbed “Resurgam,” takes its name from Portland’s motto, which is Latin for, “I shall rise again.”

Allagash ages the Resurgam on cherries to produce a beer called Cerise and on raspberries to make an ale called Red.

Resurgam is a gueuze-style blend with lively carbonation, piercing acidity and a dry, peppery finish.
